Not being a big fan of cauliflower, this one really jumped out at me. I mean, I’ll eat it, steamed mixed with other veggies and such, but it just wasn’t high on my veggie hit list. Definitely not enough to buy a whole head like the one the Mrs brought home the other night.
We took the head of cauli and sliced it in to about 1″ thick patties. In to a ziploc baggies they went with a mixture of egg and whatever mild spices you may want. In a plate, we mixed a 50-50 mix of Dixie Fry and Panko bread crumbs, completely coating the cauli pieces. Waiting for the slices, patiently in a deep saucepan, is oil heated to near smoke point. The veggies are placed in and cooked to a deep brown coating and flipped to complete the cooking.
I failed to remember to take more appropriate pics but I ensure you that the dish was well received, even by the most skeptical of 6-11 year old children. And that, is saying something.
As for the rest of the dinner, some Chicken sauteed in a few misc ingredients over Basmati rice. Great easy dinner.
