Very simple and very flavorful. Picked up a jar of Tikki Masala sauce from Raley’s (I think) for just a couple bucks. A few chicken thighs out of the freezer originally from Costco and you’re ready to go.
It is actually pretty easy to whip this one out. You’re going to get a sauce pan really hot with some oil and fry the thawed, diced, and spiced (if you desire) chicken until it’s nicely browned. After which, I drained most the oil and poured in the sauce with the chicken and let it simmer to finish the cooking process. Add a bit (or more) of coconut milk. and you really take the flavor to a new creamy level.
Pour this over rice and you’ve got your first Indian meal. We had a few artichokes in the fridge so that was our veggie of choice.
